Once fall arrives, pumpkin seems to find its way into just about everything. And while we usually think of it as the star of pies and other indulgent treats, canned pumpkin can also be a surprisingly wholesome ingredient. It adds fiber, vitamin A, and plenty of seasonal flavor, while cottage cheese and Greek yogurt bring extra protein and creaminess. Together, they make it easy to give your favorite fall sweets a lighter, more satisfying twist.
These protein-packed recipes are simple, family-friendly, and easy enough to make anytime. Just be sure to use 100% pure pumpkin, not pumpkin pie filling.
Cottage Cheese Pumpkin Muffins
Cottage cheese may not be the first ingredient that comes to mind when making pumpkin muffins, but once blended, it creates a smooth batter and adds both moisture and extra protein. The finished muffins are soft, lightly spiced, and perfect for breakfast or an afternoon snack.

Ingredients
- 1 cup canned pumpkin puree
- 1 cup high-protein cottage cheese
- 2 large eggs
- ⅓ cup pure maple syrup
- 1 teaspoon vanilla extract
- 1½ cups white whole-wheat flour or all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 2 teaspoons pumpkin pie spice
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ⅓ cup mini chocolate chips, optional
(Makes 12 muffins)
Directions
- Preheat the oven to 350°F, and line a 12-cup muffin pan.
- Blend the pumpkin, cottage cheese, eggs, maple syrup, and vanilla until completely smooth.
- In a separate bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
- Pour the wet ingredients into the dry ingredients, and stir gently until just combined. Fold in the chocolate chips, if using.
- Divide the batter evenly among the muffin cups, and bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool slightly before serving.
Easy finishing touch: Add a few mini chocolate chips to the tops before baking for a bakery-style look.
Soft Pumpkin Chocolate Chip Greek Yogurt Cookies
Pumpkin naturally gives cookies a soft, tender texture, and Greek yogurt adds a little protein while keeping them moist. These are more soft and cake-like than crisp, which makes them especially good with a cup of coffee or tea.

Ingredients
- ½ cup canned pumpkin puree
- ½ cup plain Greek yogurt
- 1 large egg
- ⅓ cup brown sugar
- 1 teaspoon vanilla extract
- 1½ cups all-purpose or white whole-wheat flour
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup semi-sweet or dark chocolate chips
(Makes about 16 cookies)
Directions
- Preheat the oven to 350°F, and line a baking sheet with parchment paper.
- Whisk together the pumpkin, Greek yogurt, egg, brown sugar, and vanilla.
- In a separate bowl, combine the flour, cinnamon, pumpkin pie spice, baking soda, and salt.
- Add the dry ingredients to the pumpkin mixture, and stir until just combined. Fold in the chocolate chips.
- Spoon the dough onto the prepared baking sheet and gently flatten each cookie slightly, as pumpkin cookies tend not to spread much.
- Bake for 10 to 13 minutes, until the tops are set.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a rack.
Pumpkin Pie Protein Smoothie
For mornings when you want something quick, this smoothie gives you all the familiar pumpkin-pie flavors in a much lighter form. Greek yogurt makes it creamy and adds protein, while frozen banana provides natural sweetness.

Ingredients
- ½ cup canned pumpkin puree
- ¾ cup plain Greek yogurt
- ½ frozen banana
- ½ cup milk of choice
- 1 tablespoon almond butter or peanut butter
- ½ teaspoon pumpkin pie spice
- ¼ teaspoon cinnamon
- 1 teaspoon pure maple syrup, optional
- ½ teaspoon vanilla extract
- Handful of ice
(Makes 1 large smoothie)
Directions
- Add all ingredients to a blender, and blend until smooth and creamy.
- Taste before adding the maple syrup, as the banana may provide enough sweetness.
- Add a splash of milk for a thinner smoothie or extra ice for a thicker one.
- A little cinnamon sprinkled on top makes a simple finishing touch.
Optional add-in: Blend in one or two tablespoons of rolled oats for a little extra staying power.
